Sure! Here's a recipe for oven slow-cooked Korean BBQ beef ribs with mashed sweet potato and spinach:

Ingredients:
For Korean BBQ Beef Ribs:
2 lbs beef ribs
1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup rice wine vinegar
2 tablespoons sesame oil
2 tablespoons minced garlic
2 tablespoons minced ginger
1 tablespoon gochujang (Korean red pepper paste)
1 tablespoon vegetable oil
1/2 cup water
Sesame seeds and sliced green onions for garnish

For Mashed Sweet Potato:
2 large sweet potatoes, peeled and cubed
2 tablespoons unsalted butter
1/4 cup milk
Salt and pepper to taste

For Spinach:
1 lb fresh spinach
2 tablespoons sesame oil
2 tablespoons soy sauce
2 teaspoons minced garlic

Instructions:
1. Preheat your oven to 300°F (150°C).
2. In a bowl, whisk together the soy sauce, brown sugar, rice wine vinegar, sesame oil, minced garlic, minced ginger, gochujang, vegetable oil, and water to make the marinade for the beef ribs.
3. Place the beef ribs in a large oven-safe dish or Dutch oven, and pour the marinade over the ribs. Cover the dish tightly with foil or a lid.
4. Slow-cook the beef ribs in the preheated oven for 3-4 hours, or until the meat is tender and easily falls off the bone.
5. While the beef ribs are cooking, prepare the mashed sweet potato. Place the cubed sweet potatoes in a pot of boiling water and cook until fork-tender, about 15 minutes. Drain the sweet potatoes and return them to the pot. Add the butter and milk, and mash the sweet potatoes until smooth. Season with salt and pepper to taste.
6. For the spinach, heat sesame oil in a pan over medium heat. Add minced garlic and cook until fragrant. Add the spinach and cook until wilted. Add soy sauce and cook for another 2-3 minutes. Remove from heat.
7. Once the beef ribs are done cooking, carefully remove the foil or lid from the dish. Increase the oven temperature to 375°F (190°C), and bake the beef ribs uncovered for an additional 15-20 minutes to allow the marinade to thicken and caramelize on the meat.
8. Remove the beef ribs from the oven and let them rest for a few minutes. Sprinkle with sesame seeds and sliced green onions for garnish.
9. Serve the oven-slow-cooked Korean BBQ beef ribs over a bed of mashed sweet potato and with a side of spinach. Enjoy!
