Daniel Gritzer did a great article on Serious Eats comparing the flavor you get from different chicken pieces. He found that breasts give the best flavor, but like you said very little gelatine. Toss in some unflavored gelatine at the end to get a tasty, fast soup with all the richness of a slow simmered soup.

You seriously read my mind. I was looking for a chicken breast ramen recipe and ended up making a chicken noodle soup with chuka soba noodles. Will definitely look into this for next time

Just wanted to know that your channel was what eventually got me making my own ramen. Learning about the different components of ramen along with some easy recipes was very helpful in building up my confidence to move to more difficult recipes. Can't wait to see what else you are going to make.

hi! big fan! I’m from the south and so the most popular style ramen (if sold) is a thick, spicy tonkotsu broth. I was wondering if you would attempt a video on making a tonkotsu ramen with a chili oil or paste of some sort? Thanks!

Ooo my family makes a chicken broth in a similar method! Mexican family style: 1-2 bay leaves, a little bit of salt, potatoes, carrots, some zucchini, and let it boil! I’ve been trying this out recently and was kinda surprised it turned out well! I’ll think I’ll try to add the konbu and niboshi next time and see how it changes the flavor! Thanks for the great video!

Awesome video! I've been to both of Iida-sama's shops and although it's not the same soup he serves there it is a good compromise for the home cook.

What did you do with the minced chicken breast after you made the soup stock? Could you use it as a topping or has all the flavor/nutrients been sapped out of them into the soup?

I know I'm watching good videos when I literally don't have access to any of these ingredients (living in E. Europe) and thus I can't make crap but I still want to watch these. Kinda entertaining. Keep up the short videos and these less traditional ramen recipies.

If you have a food processor you can grind meat with it. Well very finely chop I suppose lol.

This is similar to the next bowl I’ve been planning. In a video I saw a vegan make a broth by deglazing a pan than had cooked mushrooms and garlic and scallions, and I thought the same concept could be done with chicken breast. This seems like it would be interesting to test out this way, but I might use a miso tare instead to thicken the soup and provide some much needed Umami. Seems like the chicken oil would be a must though to layer the chicken flavor.
