For a good leather look, in line with you using watered down paper and PVA, I highly recommend brown construction paper. I used it for two goblin tents and some wooden watchtowers, and it dried rock solid while giving me a very nice draped leather look.

I might even experiment with using it as banners, painting them up and all.

I think your approach with the ram roof is excellent. All I would do is dry brush the hell out of it with a different brown to bring it all together. The method is similar to "leopard spotting" for rocks and natural stones, where you use strong and different spot colours as a base, followed by a messy and heavy dryrbrush. The end result is still incredibly impressive and you should be proud. Not many people have built a chain swinging battering ram for their castle walls!!!

I would consider to use a small wire brush to mess up the roof a bit and use two to three diffrent paints that are closer in color
Maybee a basic midbrown and then mix it with a drop of red or beige, paint a few hides and then mix another paint into the mix and paint some more

This looked pretty good over all. I do agree with you about the roof, though. It looked just a bit "Off" compared to the rest of the build. Didn't quite fit. For suggestions, I'd agree with what someone else had said about the brown construction paper. Also to add to that, use bigger pieces of ripped paper. If you use the brown paper and soak the heck out of it in watered down PVA, you can lay it out on the roof frame and actually scrunch it up a bit. Give it some natural wrinkles. Once dried, you don't even really have to do much painting on it. It is already brown. Just hit it with a black or brown wash, and then do some tan dry brushing. The construction paper already has a good, rough texture, especially if you made some wrinkles. Since it is "Leather, " you can also hit it with a green wash where moisture would collect. This will give it a bit of weathering and moss growth.

As for these washes, I wouldn't use the expensive Citadel stuff. I usually make my own basic washes. I just purchased the Army Painter washes, but will be using them sparingly since they ain't cheap. Hahaha. Jeremy over on Black Magic Crafts has some wash recipes. He also did a few different things using brown construction paper to look like leather.
