The price of the dried chives at target was so audacious for me that I went to the local farmer's market, bought a $2 bundle of fresh chives (with some flowers as well, those are delicious), cut them and dried them myself. Better than any store-bought jarred chives I've ever had. Only took a week to dry on a cookie sheet. Got most of a jar plus the flowers which are huge bombs of chive flavor AND pretty. Sometimes doing things yourself is the best.

Target in Australia is just a clothing and homewares store, the idea of them serving food is literally like walking into a nike store and being offered a cheese tasting platter, absolutely unhinged.

In Trinidad we call the rice dish Pelau and it’s made with mostly long grain brown rice and either chicken, beef or pork. Some make it with coconut milk and use garlic and bay leaf and a green seasoning which is a marinade made with onions, garlic, chives, thyme, green peppers, thyme as the base and other people will add other herbs and aromatics to this also if you’re using it on seafood. Other stuff such as red beans, pigeon peas, black eyed peas or lentils are cooked in there as well. You can add a whole hot pepper such as scotch bonnet in there to add a slight heat and great flavor the trick is to leave it whole and not burst it through the cooking process. It is removed when the dish is done and either eaten or discarded.
