Fill jars with pears cut into your choice of size.
add:
1-3 cinnamon sticks (or 1 tsp ground cinnamon)
1 TBS sugar
fill jars with warm water
add lids and rings,
Hot water bath, rolling boil for 5 minutes.

If you dip your pears in boiling water, just like you do when processing tomatoes then place them in very cold or ice water, the skins will slip off easily. Pears are not easy to peel using a paring knife. I found this method useful when I had bushels of bartlett pears to can. Hope this helps.

We used to can 1/2 pears like this. For desert. And pour a warm custard over them. The making of the custard was my 1st cooking “job” in the kitchen and I still make it for friends. 5 eggs + 1 yolk per quart of milk. Heat milk to steaming. While heating the milk I whisk the eggs and some sugar(just to get a head start on the sweetening), and a pinch of salt. “Temper” the eggs: dribble a little hot milk in while whisking, adding it all, little by little til you know the egg mix is already hot, then dump in the rest and cook over med-low to low, whisking all the while. It’ll kinda “foam” a little, right before it thickens up. I usually go til visibly thickening, around 180-190 degrees. It’ll thicken a lot more when cool. Adjust sugar and flavorings. I haven’t had it last more than a week cause I eat/drink it before then. You can freeze it too. Frozen custard. I do this with whole milk, but some heavy cream would prolly be killer😊 The whole deal only takes about 10-15 minutes.

Your children are adorable and so respectful and helpful. I think television programming, video games, and the music of today are very detrimental to a child and build stress and anxiety. It teaches children to be quick to respond insteading of thinking things through. You are raising your children to be successful and self reliant. Wouldn't that be wonderful if all children had parents that had their children work with them in the everyday chores. I love your channel!

Canning pears for the first time today. Happy to hear you say 5mins. USDA says 20mins +10minss since I'm at 6000ft. That sounds like mush to me. Tried your 5mins.

Instead of cinnamon try tossing in a half vanilla bean cut open lengthwise... Also ginger and lime juice are fantastic... It takes a simple desert to the next level.

My Dad went by the Ball Blue Book. It says put the water an inch over the lids. Yes, many siphoned and some jars even broke the bottoms out of the jars. Thanks for giving us the facts!

I’m 1 of 10 siblings. Grew up on very large dairy farm in the 60’s -70’s. Totally love your videos with lots of memories including ‘ wacking’ the pigs to move’em.

Such marvelous memories! Many younger people may not have experienced using only seasonal produce and canning the rest for winter, since so much is available year round at the store. We NEVER bought out of season produce. We canned summer fruit and ate it in the winter. We learned to enjoy food by the seasons and in many ways I still eat that way. I am almost 70. Pears are a good one to can in small batches. I remember my aunt would have 3 pears that were ripe. We would split one for supper and she would can the other 2 in a sauce pan after supper!
