You could use the Westcott Eyelighter in place of the low soft box. I love it and I don't work for Westcott. Check it out. Very cool.

Check your edit on the video because the close ups you showed weren't the shots you actually took in the 2nd and 3rd lighting set up. In fact the 2nd & 3rd closeup were the exact same shot. Definitely not the under lit shots you took.

Good ideas but mediocre results... While the lighting is simple indeed..., it is also very flat and boring.
