I want to try this cooked a little longer and then rolled up in cooked egg whites with cheese. Cut the yolk and Avocado into strips and roll it or wrap it. Could add bacon or whatever. Make breakfast sandwiches. So many ideas!

I just was thinking up this idea and how it would be good. The video I just saw they froze them for 8 hours before frying them so to keep them even softer/yolkier and instead of rolling the eggs they just layed them in wells of breadcrumbs and then sprinkled more on top with a spoon. Both versions look very good anyway. But I thought it might be helpful

Freezing the egg yolks slightly would help you not break them.
