Try the Nesco spices, they are really good and make it much easier. You can find ingredients on their website if you are concerned about it. Simply add 1 pack of cure and one pack of spice to amount of meat specified on package, mix and squirt onto dehydrator. The wide tip on plastic gun works better and dehydrates just as good as narrower strips and takes less time than the metal guns narrow tip. As for meat that works around plunger, just leave plunger extended and unscrew handle end and slide plunger out dragging meat off walls of gun. Reload that meat when u refill gun. At end add it to the meat stuck in tip and hand shape that and put on dehydrator. You can mix the spices to get different flavors. My favorite is 1 pack original to 2 packs Hot&Spicy. Want it hotter make it 50/50. The Original makes a good jerky and you can add things like chipotle pepper, teriyaki sauce, cayenne pepper, garlic, ect to it to make other flavors. If dried properly it will last 3-4 weeks in zip-lock bag at room temp.
**TIP--lay strips onto towel in line and roll so both sides are in contact with towel, lay next line and roll. Continue until all jerky is rolled into towel while still hot from dehydrator. Allow to cool while rolled up in towel for several hours or over night. This dries oils off jerky and it will last longer

I tried one of the jerky guns years ago and although it was easy to use I found the cure to be much saltier than I enjoyed eating. I'll stick to taking a roast or other lean cut of beef and dehydrating it. The level of tenderness depends on how you slice the meat as some people like a chewier jerky and some like a tender jerky. At any rate you have to taste it to decide for yourself and if you like a lot of salt then these kits are for you. I like to marinate jerky meat in worchester sauce, liquid smoke, salt, pepper, cayenne, onion and garlic powder. No sugar. It's not needed.

Is there a difference between oven made jerky and a dehydrator?

Put dehydrator trays on a lazy Susan. The pressure of meat coming out will spin the tray.

I dont store in fridge for maybe 5-7 days its in a air tight tupperware on counter

I bought this one year ago, but it is broken now. Several days ago, I got a WILDDIGIT stainless steel jerky gun. That is much better than this one.

Great video but a tip jerky does not have to be refrigerated. You didn't tell your audience. Can put in a baggie and will keep for months. Thanks for the video
