Congratulations! Looks like a great house. We bought one that was heavy on paneling as well. We had to brighten up the kitchen/dining area so painted the paneling a light yellow and added more recessed lights. It made a world of difference. (We don't use our fireplaces either but have discussed inserting a wood stove in the lower one in case of major power failure.

From someone who used to live in a country house with the EXACT same wooden wall panels, you REALLY REALLY need to watch for any bowing on the walls, if it starts to bow you need yo take it off asap and check whats going on behind it... moisture trapping and/or termites... unfortunately these are alot of maintenance...
