A bit of background here.
In this fight Ip Man has a broken (or healing from being broken) arm. The injury occurs earlier in the film. That’s that weird thing he does with his arm where he withdraws it as his intercepting fist and moves the other hand forward. He’s trying to cover his injury because it’s hurting. Geddes capitalized on that and attacked that side relentlessly, whereas the other fellow martial artist he spars before this notices his injury and they both switch to a one-handed fight.

Also in this movie, Ip Man is pushing like 60 or 70 years old and is also dying of cancer. He’s not nearly at his best in term of fighting ability in this movie.

Hitting in the balls, altering the joints and chopping throat/eyes are three forbidden moves in martial arts. Normally when martial arts masters practicing or fighting they would not use them because martial arts are not killing people without proper reasons.
