With Norman, I think it'd be cool if his second type was grass, fire or water, depending on which starter the protagonist chose, being the same type as said starter.

Thematically this works with him being the protagonist's father, and - if we are allowed to break the regional dex rule in this instance - it could be one of the Johto starters, either in middle or final form, to reflect the character's Johto regipn origins.
