Beef Birria Tacos Using the Instant Pot Recipe

The Instant Pot quickly braises beef to ultimate tenderness. Dip tortillas in the cooking liquid for added flavor, then crisp the outside in a cast iron skillet. Melted cheese takes you into quesadilla territory. Special equipment required: Instant Pot (or similar style multicooker), blender and a cast iron griddle or pan.

INGREDIENTS:
2 1/2 pounds Certified Angus Beef ® chuck roast, cut into 3” cubes
6 dried guajillo peppers, stems and seeds removed
2 cups low-sodium beef broth
4 teaspoons coarse kosher salt, divided
1 1/2 teaspoons fresh cracked pepper
2 teaspoons cumin, divided
1 tablespoon canola oil
1 medium white onion, diced (about two cups)
4 cloves of garlic, minced
1 tablespoon tomato paste
2 teaspoons oregano
1 cinnamon stick
1 (10-ounce) can roasted tomatoes and green chilies (like Rotel® brand)
2 chipotles in adobo (about 2 tablespoons)
2 limes, one juiced one sliced
14 ounces shredded Chihuahua cheese or Monterey jack
16 (5-inch) corn tortillas
1/2 cup chopped cilantro

I've been wanting to make these tacos for quite some time now, and with so many recipes, I didn't know which way I wanted to approach it. After countless hours of watching different recipes, I've decided on this one specifically with a small tweak. I'm going to add bay leaf and carrot to the pot before pressure cooking. Looks simple and delicious. Can't wait to try

So I'm in a time crunch my local Mexican supermarket is closed only place near that has the pods and I have to compensate the guajillos with chipotles in adobo. Can anyone help me figure out a ratio? I'm about to run some tests in the meantime. But because these peppers are softened already do I skip the simmering in broth step? Would I just add the broth and cleaned peppers right to the blender? Any help would be Divine ❤

I can help you with those😋.I have a beef shank, would the same time frame used to pressure cook this cut like with the chuck? It’s easy to over cook in these pots I find. It’s a leaner cut of meat.

Hello! I am going to make birria tacos today for the first time. I know people use different chiles. I have guajillo and chile de árbol. Can I add the Chile de árbol to your recipe? I never used dry chiles and don't know which are spicy. I'm a Puerto Rican trying to make Mexican food. My family loves Mexican food. 😊

I’ve made these twice and need help. They were awesome but….first time I only had flour tortillas so I used those. They got really soggy during the fry it process to the point they had to be eaten with a fork. I tried them again the next week (yes they were that good) and this time I used corn tortillas and the same way. Help please.
