My personal conspiracy theory is that Seamus was thinking Tim was getting a bit too angry and so Seamus wanted Tim to take a break, but the only way to do that is to make Tim sick, so Seamus bit Tim to make Tim into a full leprechaun, and the only way to break the curse is to find Seamus' pot of gold.
