I have learned so much from ALL your recipes Chef! As a Greek American, I always make potato salads with Greek Olive oil and vinegar and dislike mayo based potato salads. I‘ve made this six times. it’s such a wonderful recipe. I live in Europe and I couldn’t get Japanese mayonnaise. I use the normal one and since you said the Japanese one has more umami flavour, I put half a teaspoon msg into the mix.

I just made this today, but without the ham. I was interested in making it because I had Japanese potato salad recently at a Japanese garden. I think I'll reduce the amount of rice vinegar next time. I think I'd like it with less of that "bite." Very good recipe, though. Thank you.

I like potatoes and I’ve never met anyone who dislikes potatoes. For research purposes I like to ask people if they have ever known a person who dislikes potatoes, and the answer is alway “no”. Not eating them for health purposes is one thing and not liking them is another. So…have *you* ever met anyone who dislikes potatoes? 🧐

That salad is called "ENSALADA RUSA" - with a little twist of Japanese vinegar and the use of cucumbers, we
usually use peas in ensalada Rusa, and usually add olives, some might ask why is it called Russian Salad??
I don't know that question, but the very Eastern part of Russia, is pretty close to Japan, so maybe it is originally
Ensalada Japones, or maybe even Ensalada Edo, invented during the Edo Period? All Tokyo aside, the Japanese
cuisine is some of the best in the World, they excel in the Udon & Umami game, the mayonnaise which is in
a Japanese style with umami, can actually be made in the kitchen, using olive oil, egg yolks, salt, lemon juice,
pepper, and mix in blender, you don't have to buy it in the shop, some of which cost $10 a jar in Coles or Woolies,
the ingredients used would cost you about $1 to $2, and here's the best part, you know what went into the mayo.

Can i use white vinegar instead of sushi vinegar its got alcohol not for me.
