Double stuffed baked potato
Ingredients:
6 large russet potatoes
( olive oil and salt to spring over potatoes)
1 med yellow pepper diced
1 med red pepper diced
1 med yellow onion diced
2 garlic cloves minced
1 stick of butter room temperature
1 - 8oz mild cheddar cheese shredded
2 oz gouda cheese shredded
1/4 tsp salt
1/4 tsp pepper
( add more salt if needed)
1/2 cup light cream
Recipe:
Wash and clean your russet potatoes. Dry them off. Puncture holes in each one. Lather them with olive oil and sprinkle salt all over. Then you have to bake it in the oven for approximately 45 to 60 minutes at 425°. During the cooking process you can check them and Pierce them to see if they are done if they are done then remove them from the oven to let them cool.
Dice up your peppers onion miniature garlic and saute in a skillet with one tablespoon of olive oil and 1/4 tsp salt and a sprinkle of pepper for 4 to 5 minutes on med/high heat. When you're done sauteing set it aside to cool.
After the potatoes cool, cut a little of the skin off the top of the potato. Remove all the filling from the potatoes add them to a bowl use a potato masher to mash it up just a little bit. Then add your 1/4 tsp salt and 1/4 tsp pepper. Then add a stick of butter and mix it into the potato mixture. Then add your light cream and 8 oz of your cheese save the remaining 2 oz for the top of the potato. Then add your peppers and onions to the mixture and then mix everything up. Now you're filling is ready to be stuffed into the potatoes. Fill the potatoes as much as you can if you have extra filling just put it right on top of the potato. Then add your cheese on top of each potato and then we're going to heat this up in a 425° oven for approximately 10 minutes we just want to melt all the cheese on top and the cheese that's inside. And there goes your double stuffed baked potato.
