I love the reverse sear. It makes it medium rare from top to bottom with just a nice char on the outside. I'm not that great at cooking steaks but this way is best for me

I learned to reverse sear years ago ... game-changer for me! Almost foolproof, and fabulous!!

From personal experience, reverse searing is the preferred method in catering for cooking all the meats, including fish. Mostly oven, sometimes sous vide.
Also Andy is the man and I’m buying that book.

I’m a contractor I’ve shown people for the last 45 years how to do things better than what they normally do all you need is somebody that has more experience and sometimes if you’re willing to learn you learn something new that’s actually good

Beautifully cooked. I have some intermediate cooking experience but my dad is a great chef and you clearly know what you're doing and have years of experience in the culinary field. You remind me of him a lot.

I love how he left the bone with the meat. The meat off the bone is some of the tastiest of the whole steak.

The reason most chefs and restaurants don't use this method is simply time. It takes a lot longer to cook and get it to the table.
