I did this on th3 grill recently. It's way better than an oven. I did indirect heat. Got it up to about 125 and transferred it to a cast iron pan that was getting direct heat. Crust accomplished with some butter and oil.

130°F for a steak that thin will result in a medium steak after searing. The meat will continue to cook after being removed from the oven. A sous vide will only hold meat at the temperature you've set it to. For a t-bone that thin, I'd set it to 124°F, season the steak, put it in a vacuum bag or ziploc with the air removed and submerge in the sous vide bath for an hour to an hour and a half. It will not go above 124 and the muscle fibers will have broken down to yield a very tender cut. Sear the steak on a grate over a chimney charcoal starter for 30-seconds to 1 minute per side and 15-20 seconds on the edges. You will never fail to make perfect steaks every time using this method.
