I hope you guys don't think I'm rude I apologize if it comes out that way. But I wanted to let you know that tomatoes do continue ripening if you let them sit awhile after you pick them: once they start blushing they're already going to continue by themselves. And if you picked them green you can throw an apple in a bag with them just a paper bag and they will continue to ripen over time as well. If you do that your tomatoes will work towards setting more blossoms and give you more fruit sooner.

Save those tomato skins. Dehydrate them and powder them for tomato paste. Just add the powder to anything tomato that you need thickened.

For all your clean living you guys guys are sick a lot! Becca always has a headache, someone is always puking, stomach issues. I think you need to have your water source checked by a lab.

I always pick my tomatoes when they are orange an let them ripen in the house before I process them.. then the birds etc don't pick at them. I am in Canada so I find they don't like the cool weather.. sometimes they don't ripen on the vine well.. so I pick and then they finish the small ones

Yellowing and or Green shoulders on tomatoes is indicative of high temp exposure. It is still just as delicious ❤ great 🍅 harvest BTW

Setting the tomatoes in the sun for half a day should make them go pretty red.

I pressure can hot packed quartered/crushed tomatoes at 5 lbs pressure (heats less water, faster canning, uses less energy and less money, will need at least 3/4 inch head space, ) without removing skins or seed or juice (saves time, labor, and burnt fingers up front.) When I use them I run them through a food mill and make a sauce that is just as thick because (I think) the skins have a lot of pectin. Pectin is the stuff that thickens jam. Just run the canned tomatoes through a food-mill and simmer the resulting pasata with the other ingredients a bit and it thickens up. The nchfp will not approve leaving skins on the tomatoes, but I find it easier, faster, and I need less fruit to fill quarts. Whatever nchfp is worried about, I haven't gotten sick leaving the skins on. Just make sure the ph of the tomatoes is 4 or below. My tomatoes are always acidic enough, but depending on the tomatoes you may need to add lemon juice. Not sure what the exact starting weight of fruit should be, but after cutting and coring, a resulting 16 lbs of chopped fruit will make 7 quarts of quartered/crushed tomatoes. 7 quarts is what fits in a standard 23 quart pressure canner. Later when you open a jar (if you want a smooth sauce without seeds and skins) run it though a food-mill, simmer the resulting pasata with other ingredients, and you are good to go. Hope this helps!

Rebecca the tomatoes have sunburn to much sun to fast. From cutting your vines and Hot temperatures . You might have to put a shade cloth on your greenhouse.
Justin did get scolded for touching the lid unless it’s a lid that’s been on for a day. Dont touch, it can cause The lid to not seal properly.
