I think Luke will wield a single lightsaber in a two-handed grip, like his father. It's impossible to simultaneously wield two sword unless one has extensive natural talent, training and practice, and Anakin never demonstrated such natural talent with dual wielding in the movies, received training in the technique, or practiced.

If he carries the blaster, it'll likely be to compensate for the reduced range and forcefulness (pun not intended) of effects for his ability to use the Force to attack enemies beyond his lightsaber's reach, compared to his father.
