Steamed Layer Cake by Go Chef

Ingredients:
• 2 boxes of coconut milk (200ml x 2)
• 400ml of warm water
• 2 cups of rice flour
• 4 tbsp of corn flour
• 4 tbsp of wheat flour
• 1 cup of sugar
• ¼ tsp of salt
• Food colouring – green, blue, red & purple

Method:
1. Mix coconut milk with water and put aside.
2. In a bowl, mix all the flour, sugar and salt.
3. Pour in the coconut milk mixture and whisk it till smooth
4. Sieve the batter to get rid of any lumps.
5. Divide mixture equally to 7 portions.
6. 4 portions with different food colouring each. Other 3 portions will be white batter, do not add food colouring.
7. Grease the cake pan with margarine. Put it in the steamer on medium flame.
8. Slowly pour in the first coloured batter, close the lid and leave it steam for 10 minutes.
9. Then, put in the white coloured batter and steam for another 10 minutes.
10. This continues for the other layers. All need to be steamed for 10 minutes for each layers. Remember to put in the white layers between the coloured layers.
11. For the last layer, steamed it for 20 minutes.
12. Once done, take the lid out and leave it for 5 minutes.
