The little "Taco Truck" as I called it when I was a kid, always had the good stuff like tongue, heart, and tripe for their dishes. Beef tongue tacos and nachos were all I ever bought. If they didn't have tongue I usually went with chorizo. Best stuff ever.

10/10, tongue is amazing, I've only had it a couple times but I really want to find someone make it myself. You need to try heart next, you want to cook that fast and hot, it's a very lean muscle so you don't want to overcook it. Make sure you remove the heart strings on the inside and all of the excess fat on the outside, that fat outside is not edible in any way, except rendered and used to fry stuff but it gets everywhere.

I tried tongue tacos in arizona. I won’t lie, they’re not my fav. The texture… but the cabeza was my favorite. I’ve never had a richer or yummier taco the el pastor couldn’t compare the beef and chicken was subpar compared to cabeza. At first seeing the meat scraped off a skull threw me off but wow. Best tacos ever come from meat of the head.

You did good just add more seasonings and spices but it’s pretty good

Oh and the smell is horrible but you get use to it when your mom makes it your whole childhood
