Easy Pineapple Shrimp Tacos 😋 Kicking Taco Tuesday up a notch with Pineapple Shrimp Tacos! Tangy, sweet, and savory, these are ready in a pinch and make the perfect meal for weeknight dinners or entertaining.

INGREDIENTS:
YIELD 4-6 servings

1 1/2 pounds (680 g) medium raw shrimp, peeled, deveined, tails off
2 cups (330 g) fresh pineapple chunks
3 tablespoons (45 ml) extra virgin olive oil
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon salt
2 cloves garlic, grated
2 limes, divided
2 cups (140 g) shredded purple cabbage
8 to 12 corn tortillas, store-bought or homemade, warmed
1/4 cup (4 g) chopped cilantro
Easy Guacamole

Preheat the broiler to HIGH. Coat a rimmed baking sheet with cooking spray. Broil for 2 minutes on each side carefully flipping the skewers with tongs.

I'd add a wee bit of salsa and sour cream to drizzle on top, but other than that...perfect as always. Thanks so much for posting these ideas!! Makes my meal planning so much easier!! :)
