JALAPEÑO PINEAPPLE SHRIMP TACOS 🍍

I have been on a taco kick lately, and these are perfect for the summertime.

for the shrimp:
1 1/2 lbs shrimp, peeled and deveined
olive oil
chili powder
ground ginger
dried thyme
cinnamon
all-spice

for the garlic cilantro sauce:
2 cloves garlic, minced
1/2 cup sour cream
2-3 tbsp lime juice
1/2 cup fresh cilantro
2-3 cups shredded cabbage

for the jalapeño pineapple salsa:
1-2 jalapeños
1 cup diced pineapple
1/2 cup fresh cilantro, roughly chopped
juice from half an orange
juice of 1 lime

1. Season the shrimp with all the seasonings and toss together in olive oil. Cook on the stove until done.
2. Put all the ingredients for the garlic cilantro sauce, except the cabbage, in a food processor and blend. Pour the mixture over the shredded cabbage and mix together.
3. Combine all the ingredients for the jalapeño pineapple salsa into a bowl and mix together.
4. Assemble your taco - I used small soft tortillas, topped with the cabbage, shrimp, then salsa. Enjoy!
