I usually make a melty cheese mix.

With Gruyère, good quality belegen Gouda, cheddar, Parmegiano and or pecorino. Sometimes a bit of left over port salute or Belgian abbey cheese, and if possible smoked provolone. This is epic for anything like cheesesauces, mac&cheese, grilled cheese or stuff like this. Even a handfull of this through some mashed potatoes instantly makes it epic.

(I look out for cheese when they are discounted and grate them to taste)
