Harissa Chicken Skewers

Chicken:

- 4-5 boneless chicken thighs
- 100g greek yoghurt
- 2 heaped tsp rose harissa paste
- 1.5 tbsp olive oil
- Salt
- Pepper

Mint ricotta:

- 1 pot of ricotta (250g)
- Handful of mint leaves (15g)
- Small handful of chives
- Salt
- Squeeze of lemon juice
- 1 tbsp olive oil
- 1 tbsp of water
