Tarte flambée or Flammekueche is a well-known Alsatian specialty. It is like a pizza with a thin crust of dough and baked in a very hot oven. Its topping is primarily crème fraîche, onions, and bacon.

The English translation of the original Alsatian name being "baked in the flames." Indeed in the old time, the tart would be cooked in a wood-fired oven and the crust at the border would be nearly burned by the flames.

With the making of the tart, we will learn how to make and knead a dough. The dough is similar to bread dough, except that we will use beer and milk along with some water. We will practice the “Emincer cut” for the onions and baking.

why is there beer and yeast in the dough, but no oil?

the tart is way too high because no rolling pin was used to get it really thin. also, the tarte is burned because it was too long in the oven (if prepared right, it is perfect after bout 20 min baking).

What beer would you say gives it rich flavor and Can the beer be substituted for something else? Btw great video, something new to try during the holidays
