Tarte flambée dough (Alsace thin pizza)

Ingredients for 1 tray
flour 225 g / 8 oz
olive oil 2 tbsp
egg yolk 1 pc
water 100 ml / 3.40 fl oz
salt 1 pinch

sift flour
add salt
add olive oil
separate egg yolks from egg whites
add egg yolks
add water
knead everything into a smooth elastic dough
wrap the dough in cling film and let it rest at room temperature for about 30 minutes
