HIGH PROTEIN MEXICAN STREET CORN SALAD! A secret ingredient in the topping gives it serious “cheesiness”🌽 I originally found this idea in my friend @lizmoody ’s cookbook and have loved it since!

Are you ready for this?? The ‘cheesy’ topping is hummus and nutritional yeast! Combined with golden corn, onions, protein-rich quinoa, and lime juice, it tastes shockingly like Mexican street corn. Enjoy warm or room temp for a meal-prep lunch, light dinner, or side!
YOU’LL NEED
-½ c uncooked quinoa
-1 c vegetable broth
-2 T plain hummus
-1 tsp chili powder
-1 garlic clove, minced
-4 T butter, divided
-½ tsp kosher salt (divided)
-2 T nutritional yeast
-1 small yellow onion, diced
-2 ears of corn
-Grated zest and juice of 1 lime
-Chopped fresh cilantro and green onions.
Cook the quinoa. Mix the hummus, chili powder, garlic, 2 T butter, salt, and nutritional yeast. Sauté the onion and corn, then stir everything together and top with the hummus mixture.
