How to make Keto Rhubarb Crisp with a topping that actually stays crisp. It's one of my all-time favorite desserts and pairs perfectly with a little keto vanilla ice cream.

When I was a child my great-grandmother often made rhubarb sauce and I still love it. It was so easy to make keto. The sauce is SO delicious over low carb vanilla ice cream. I will definitely try this crisp.

I love rhubarb! My mom had a rhubarb patch when I was growing up. I used to just dip it in sugar and enjoy. But I’d rather have a rhubarb crisp or sauce for ice cream. Thank you so much!!

I look forward to my rhubarb coming up every spring. I love rhubarb pie, rhubarb crisp, rhubarb cake, rhubarb muffins and even just plain old rhubarb sauce (our most common summertime dessert when I was a kid). Love the idea of baking the topping separately. Going to have to whip one of these up to help use up last summer's rhubarb in my freezer!
