My Family Starter is 124 years old! Given to my beloved Mom when I was born in the Territory of Alaska by who would become our first state governor. His family's was 60 years old. I am 64, so take it from there! We do the drying thing, only using plastic wrap instead. Before that it was waxed paper.

Since starting my sourdough, I bake 1 or 2 loaves a week. I leave my starter in the fridge.
When I want to bake a bread, I take it out, feed it, and let it rest about 12 hours. By then it has woken up and I can start making the bread.

My confidence is attempting a sourdough starter is much higher after watching this. I would definitely forget to feed it on a daily basis.

What if you like to bake sourdough twice a week? Do you think it would still be necessary to refrigerate it? Considering it's going to be refreshed for another day or two anyways?

I've really abused my sourdough starter. At this point the worst thing I've done to it is leaving it in the fridge on the top shelf for almost 3 months without even touching it, and it still lived. Literally the hooch on top turned black, and I just scraped the top black part off, and used that as a starter.

Yeast is pretty fucking resilient.

Its So Intertaining, I've Had My Starter On The Counter For Many Months Now And Have Only Made One Loaf, Which Was Very Good, I Love My Fermy Pet In The Winter, When The Temp. Is Cool To Cold Its Easy To Keep Care Of It. The Aroma IS Magic, , , , (remember This) It's Of a New Born. But as Life Happens There Isn't Always Time To Be Home to Make Sourdough Bread….. I just found this video and this is great! I have done my sourdough starter in January 2017, I baked bread once per week and I keep the starter inside the fridge and it is still nice and strong. viva!
