I still prefer to add canned diced tomatoes to matboucha, heating it up, and then plopping the eggs into gaps between the tomatoes mixture.
Best made in the oven in a cast-iron pan, but any pan/pot with a lid works.
(I'm Moroccan, BTW, so it's a regular "I'm hungry, but eggs are boring, so let's make it from scratch and wait another hour to eat")
