Today, we're making a bold, flavour-packed meatloaf recipe inspired by my love for greasy spoon diners and a summer of traveling without finding the perfect slice of meatloaf. In this recipe, I mix things up with cowboy candy, bacon, poblanos, and a homemade Tex-Mex seasoning. This meatloaf stays juicy, savoury, and full of unexpected flavour. Ingredients:
1 Kg (2lbs) ground beef
One onion, diced
1 poblano pepper, diced
3-4 strips bacon, chopped
30 mL (2 Tbsp) tomato paste
1 - 113 mL can roasted Hatch peppers
3 eggs
375 mL (1½) cups bread crumbs
30 mL (2 Tbsp) Tex Mex seasoning

Method:
Preheat oven to 180ºC (350ºF)
Mix together all ingredients - except BBQ Sauce
Shape into a loaf on a rimmed baking sheet, and slather with BBQ sauce.
Bake until internal temp reaches 160ºF.

My mom ran a little greasy spoon cafe——-her meatloaf was legendary; she used oatmeal, eggs and evaporated milk to help keep it moist as well as lots of onions and celery with the addition of garlic, shredded carrots and a small amount of chopped green pepper. No tomato or sugar just ketchup on the side. Her loaf sliced like a dream was always moist and juicy. I continue to make this recipe and have taught my kids and grandkids how make it and is frequently requested for potlucks 😊

Nothing wrong with meatloaf. Meatloaf sandwich is a really underrated comestible. I tend to use oatmeal rather than breadcrumbs. I haven’t tried putting bacon in my meatloaf, that sounds good, but I’d never put sugar in a meatloaf. I have a meatloaf pan that I inherited from my mom, it is a 2-part pan with drainage in the insert, about the size of a bread-pan.

Friend had a 3 tiered meatloaf wedding cake..
he did not like sweets... frosted with mashed potatoes and decorated with basket weave bacon & cocktail sausage flowers... it was awesome

My Grandma ran a little diner here for over 25 years, she could make a meal out of nothing, just a fabulous cook. I miss my Grandma and that little diner, it closed soon after she retired.

Wow! Glen mentioned that some people add 1 or 2 cups of brown sugar to their meatloaf recipes. At that point, maybe we should just call it "meatcake."

A brother in arms! I always look for meatloaf when I travel too. The best meatloaf was from Anderson's Restaurant, of the famous split pea soup, located in Santa Nella, California. It was a mixture of beef and pork with oatmeal, apple, and sage. I have heard my whole life how good Cracker Barrel was, so when they came to town I was excited. Whah whah! Probably the second worst thing I have ever eaten in my life. Marie Calendars meatloaf is actually pretty descent but the truck stops are where I find the best versions. Follow the truckers baby, they know where the good stuff is located. Thanks Glen, Thanks Jules, Cheers!

I've been working on a Mongolian Meatloaf. Experimenting with asian seasoning in the meat, then serve it over white rice with a Mongolian Beef sauce.

That meatloaf has to be fantastic! Only thing I’d do differently is grate the onion and dice the bacon a bit smaller.

I love meatloaf. My grandmother would use Special K cereal in hers instead of breadcrumbs.

What I like to do is do a meatloaf and a dressing, then when they're done, put them in the fridge. The next day, fry/toast the dressing and meatloaf in a skillet, and make them an open faced "sandwich" with home made brown gravy slathered over it.

I've never had meatloaf, it seem like a large meatball to me. Northern Ireland where I am from and live has it's own comfort food : irish stew, shepherd's/cottage pie, seafood pie, fish and chips, pasties, anything with potato or spuds as we call them!Lovely to learn about other cultures confort foods

I browned butter caramelize my onions first and use cooked bacon and it makes all the difference I flavor and tenderness

Once in a while I will make a meatloaf and just throw whatever I have on hand into the mixing bowl. The last time I had about half a jar of medium salsa in the fridge, so in it went. I added the usual " mexican spices " and a few other things and slapped it together. It turned out really moist and flavorful - I attribute that to the salsa. I really like these "cooking without a net" videos you make.

I loved my mom's meatloaf--especially the second day on plain white bread with some mustard. No one ever made it quite the same.

There was a Japanese chef who would microwave an onion, chop it up, mix it with ground beef and made meatloaf. No bread crumbs, no milk and bread. My mother and sister tried this method and the meatloaf was very moist.

Meatloaf is a blank canvas, I've made even a sweet and sour version as a change. After all we had over 800 pounds of ground beef in the freezers one year, did a lot of experiments. Love your shows, you keep things real and Julie's reactions are fun!

As a non-meat-eater, I still love to watch you concoct your creations and then enjoy them. So entertaining! Also, you asked....I'm an Italian food lover and the lunch we used to get at the local greasy spoon was a very Americanized version of spaghetti and meatballs. I loved it.
