This is a great simple recipe, I appreciate that you used pantry ingredients that most cooks have! I will definitely parboil the potatoes, I usually just put them in the oven raw, but the parboil looks like it helps get them more crispy. Thank you!

Imade your tandoori chicken thighs last week and instead of rice made a simple salad like you just did and added some feta I had and it was delicious. Was quite surprised that the cheese complimented the chicken. Thank you.

LOL! I pretty much just made this ! With slightly different spice: harissa paste, avocado oil, grated garlic and Herbes de provence. My chicken was two large breasts, because that's what my son likes. I don’t peel my potatoes and I partially cooked them in a covered glass dish (Pyrex) in the microwave. Roasted asparagus along and Voila!
