Family, Acorn squash is delicious. Many people pair it with apples or spread maple syrup over it but I find it just right roasted with salt and pepper. basic and good.

Roast at 400F for about 30-45 minutes to get the skin soft to enjoy. Start trying this now before the holiday season and you may find it is the perfect side dish for your next holiday gathering or potluck.

Honestly throw it in a stew with meat comes out really good. Just make sure you put it in towards the end

I am trying acorn squash out this week. But most videos say to add either brown sugar or maple syrup. Since i dont keep those on hand i am going to try stuffing the halves with maple sausage the uncooked kind. I figure with the 30 min they have you cook it should be plenty of time to cook the sausage and it will soak up both the maple and sausage flavors. Should not need any extra oil with the grease from the breakfast sausage.

Just had one it’s really good I used vegan butter, maple, coconut sugar I didn’t know you could eat the skin !! Thanks for the info
