Roasted Acorn Squash - Two Ways! Sweet and Savory recipes!

I hope you enjoy my roasted acorn squash recipes and that they also bring some Halloween vibes to your summerween meals!
Like I say in the video, I typically never measure anything, but here's a short list of the ingredients:

Sweet Recipe:
Acorn squash, halved and gutted of the seeds
add salt
pepper
cinnamon
freshly ground nutmeg (pre-ground works too)
Brown sugar
butter
Bake for roughly 20 minutes, baste with butter and return to stove
Bake for another 25 to 40 minutes or until the meat is tender.
garnish with Ice cream (optional)

General Vosk's Acorn Squash (savory recipe)
Acorn squash, halved and gutted of the seeds
add salt
pepper
Curry powder or cayenne pepper (optional)
butter
Bake for roughly 20 minutes, baste with butter and return to stove
Bake for another 25 to 40 minutes or until the meat is tender.

For the sauce:
In a saucepan, add a bit of olive oil
half a diced onion
A few cloves of diced garlic (to your taste)
one and a half diced red peppers
salt and pepper
coriander seeds (optional)
Chopped walnuts
cranberry raisons
ground nutmeg
shiitake mushrooms
rum (optional)
two table spoons of canned cranberry sauce
Serve the squash on a bed of the sauce
garnish with:
chopped chives
chopped pistachios
a spoonful of pomegranate seeds
...and enjoy!

My husband makes fall foods all year round, but he loves this time of year since fall produce is in season. This is his favorite recipe:

Haunted Pumpkin pie
1. Combine cinnamon, nutmeg, and butter to coat inner layer of pie crust before baking.
2. Add brown sugar to either fresh or pre made filling and finish baking.

3. Use your choice of black dyed whipped cream or whipped icing BEFORE pie has cooled completely to make spider web marbling that soaks into the top layer of the pie.

Be sure to use extra thick topping, since otherwise it gets a little watery. Hubby always likes to add bat and ghost shaped sprinkles, too.

Voltaire: I use an unusual amount of garlic, 4 to 5 cloves
Me being the Italian that I am: So the bare minimum amount
Voltaire: Okay I'll use half
Me: 😔

Good tip to use the ends to stabilize the squash! And I love the trivia!

Now that I have to be on a bland diet, one of the few vegetables I can still eat are the fall/winter squashes. I have always wanted to try acorn squash, and this has given me an excuse to try it! I am so excited!

My parents used to stuff the halves full of brown sugar and put a slice of bacon on top to bake them. I'm fond of filling them with dressing and baking them. Oh I LOVE dem nutz too!🤣🤣🤣

I'm so picky with Acorn squash, but I'll cube up a butternut, toss it with olive oil salt, pepper, and lots of garlic and bake it on a cookie sheet. It's fire.
