I can’t say how much I love this guy. I mean, I cook myself but I have a very limited recipes that I know by heart. Watching these videos have boasted my skills level by A LOT. I add my own little things in it and yum yum yum.

We harvested 35 acorn squash from our garden this fall and this is a new and wonderful looking and hopefully tasty way for us to bake some of them. Thanks for the ideas.

I've made something very similar in the past and it was extremely good. You had my mouth watering as soon as you mixed up the glaze. Never had the idea to cut grooves on the inside to let the glaze flow better, or the orange juice. The last time I made them it was with butter and brown sugar and they were definitely decadent.

I agree with the thing about people not liking veggies if they aren't properly salted. I love my veggies with a good helping of meat to go along.

my mom likes to put condense milk and butter in squash, it makes kind of a sweet custard like stuff at the base of the squash.

I adjusted this recipe and really enjoyed the results. Firstly, used orange juice concentrate instead of fresh squeezed - increased the orange intensity. I also drizzled some pomegranate and cherry juices over the squash before the first pop in the oven - also a dollop of brown sugar sprinkled on each one (about a tablespoon). I poured off the juice (and saved it) and slathered with the glaze (which tasted a lot to me like caramel). Additionally, I filled the bottom of the roasting pan they were cooking in with water.

This is quite literally my first time eating acorn squash voluntarily. :) Thank you for teaching me your secrets to cooking.

I use a rubbermallet to hammer the knife through the squash. Very easy and safe. This is a fantastic recipe and the cayenne is a nice touch.

JUST A WORD OF WARNING FOR ALL OF YOU: I used this recipe, but left out the cayenne. In retaliation, Chef John haunted my dreams for ONE WHOLE WEEK. The first few nights, he just droned on and on about never using cooking wine or fake cheese from a can. The fourth night, he threatened my life with a freakishly small wooden spoon. The fifth and sixth nights, he belittled me for not having Aleppo Pepper in my spice cabinet. On the last night, he just sat there smoking a sage "cigarette" and telling one bad "Dad joke" after another.

Message received, Chef. Message received.

Wow, this was the most amazing squash I have ever tasted. Don't leave out the cayenne pepper! I would love to include this at Thanksgiving.

this recipe is wonderful, been using it for 2 years now. the children don't really care for vegetable so i am making the acorn squash for my daughters day school. ages 1-5. so we will i bet they'll love it!!! the only thing im doing different this time is no cayenne pepper and im using home made syrup that's been jarred instead store bought!! yum!!!

On cutting. Cut a small piece straight across first to create a stable base. Then turn chef knife from center top downward pressing in then outward. Repeat on each side and pull apart. Cooking this skipping the btw sugar, adding cinnamon & lil agave and will see how it comes out. Thanks Chef
