This is the basic principle of why you should let your compostbin air out a few times. Moisture speeds up decomposition, produces more bacteria and thus more smell.

Carrots, with their skin on, stored in a dry dark place can last for weeks easy. Don't need to be refrigerated or plastic wrapped.

I dont know the exact science but i can tell you as someone in produce that plastic rapidly increases ripening. And because of the trapped moisture and protection from outside exposure, produce wrapped in plastic, as seen here, rots very differently than produce which is not
