Recipe:

15# Carrots
8c Spring Water
8c Brown Sugar
4 c Orange Juice

Make brine using the liquids bring to boil and set aside.

Wash peel and slice carrots

Place carrots in jar up to neck of jar
Fill w brine to 1 inch head space
Wipe rim
Place clean lid and ring on
Pressure can 30 m
10# pressure below 2000 ft
15# pressure above 2000 ft
