We Turks obtain a mixture similar to this by grating the leftover vegetables. We also add fresh mint and parsley. We can either fry the mixture we prepared in a pan or bake it in the oven. the name is "mucver"

We do this with mashed potato in the UK, although not strictly veg. It's called bubble & squeak

i love making these!! i've never tried adding miso paste though so i'll try that next time. also you can add some cornstarch and/or just a little bit of baking soda/powder into the batter to make it crispy <3

Try adding chick pea flour instead of regular flour for some added protein and a deeper taste ❤
Oh and of course you can add spices like cumin, chilli powder, turmeric, and anything else you prefer

Add a good measure of chickpea flour or besan and tomato puree. Make it look like batter. Then pour over skillet and cook with lid on. Then cook more without lid till kind of crisp. It will taste much better.

if you want crispier edges, i recommend mixing equal parts flour and starch (corn or potato). that's how my grandma taught me 😁
