Kebab e Barg (EP.15)

Friends and family welcome back! Hope you had a good week and welcome back to episode 15 of Manny's Food Channel. After weeks of planning, I was finally able to do a bbq of a traditional Persian/Iranian dish called Kebab-e-Barg (fillet mignon kebab). We love our bbq and no matter rain hail or shine, everyday is bbq day. It's easy to make, not a lot of prep and it is a great bbq idea to share with your guests.
INGREDIENTS
Juice of 2 Onions
1 tsp Iranian Saffron
1/4 cup Warm Water
1/4 cup Fresh Lime Juice
1 tbsp Black Pepper
1 Cup Olive Oil
2 Roma Tomatoes (cut in half)
1 KG Beef Tenderloin
1/2 cup Melted Butter
Season to taste
1. Steep the saffron in the water for minimum of 5 minutes.
2. In a large mix in all the ingredients except the beef and set aside.
3. Thinly slice the meat into even shape and size (around 1/2 cm thick.)
4. Using the dull side of the knife, lightly tenderize the meat from the top to the bottom.
5. Place the meat in the marinade and let sit in the fridge for minimum an hour (if you can marinade for a day it is better).
6. Slice the roma tomatoes in half and place the meat and tomatoes on separate metal skewers.
7. Place the tomatoes skin side up and cook until tomatoes start to char then add the skewered meat to the grill. Cook on low heat until it reaches your desired temperature.
8. Baste the meat with melted butter 5 minutes before meat is cooked.
9. Serve with saffron Basmati rice, roasted tomatoes and serve!
