My grandma is American, but when she was in the Air Force she traveled to the Philippines and lived there for 3 years. She makes amazing chicken adobo. I’ll have to ask her to make some again cuz this looks delicious!

My grandma is Filipino and used to make this for us every now and then when wed come over. She eventually gave me the recipe. I've used pork before but didn't like it as much as I do with chicken thighs. I told my husband when I first met him that I would make this dish for him and he just never seemed interested. One night I made it, he fell in love with the dish and now it's become a regular.

Adobo was originally a vinegar dish, not a soy sauce based dish. I actually tried making one with zero soy sauce, and just using sea salt to taste. A little sugar at the end if necessary. Fantastic

Adobo was the first dish my Filipina step-grandmother taught me to make. She taught me how to do it like a Filipino (no measuring, using Datu puti vinegar, good soy sauce, etc.) She always serves it with Siningag (garlic fried rice) and we always look forward to it when we visit her.

One time for my kindergarten class potluck my dad made grilled chicken skewers and he made an adobo style marinade for it and let the chicken rest in it overnight. My dad grilled them at the potluck and after he was done grilling and cleaning he went to try one of his chicken skewers and they were all gone! Everyone loved them so much some people went back for seconds and my poor dad who did all the work didn't even get to eat one! All the other dads grilled burgers and hotdogs so at least my dad got to eat something, but man he would talk about that for years, always in a mix of pride and indignation because he was glad everyone liked his food the best but still mad he didn't get to taste his own dish. A cold sad burger is no replacement for adobo chicken skewers. Truly suffering from success lol

I'll share my grandma's adobo recipe.

First you'll need to chop chop and dice the garlic and the onion, she does this because back then, her children would always complain and throw away the garlic and onion if they were big slices. After the garlic and onion is done she then gets the pork and toss it on the pan and toss a bit of magic sarap. After the pork is cooked she then adds soy sauce and let the pork sink into the soy suace. After a couple minutes she vinegar. And she'd throw in salt and pepper, and SUGAR. That's the secret to her recipe 😂 and then add some black beans.

That's how she cooks her adobo and I honestly love it! And oh, she makes the adobo dry. And there would no longer be any adobo sauce, only oil.

But its honestly super tasty and I love her recipe, yall should give it a try

I remember the first time I tried adobo and I will never forget. It was the most delicious dish I'd ever tasted. Unfortunately I moved states a couple times and eventually lost contact with the person that made it😞

Chicken adobo with hard boiled eggs is my favorite kind of adobo. In my family’s recipe, we use white vinegar instead of the apple cider vinegar. Sinigang and adobo are my comfort foods that make me feel like a kid again.

Hey. Try this version of pork adobo. Ingredients are the same but switch soy sauce with patis. At the end render the pork fat at the end. And then add kaffir lime leaves. Enjoy!

My filipino housemates made me like Adobo, after a while I actually liked it. Both with chicken and pork... We don't uee much vinegar in our dishes so it got sometime for me to get used to it. Sinigang is one and a beef curry I forgot the name are my favorites...
