Oh my goodness. Thank you, thank you. I’ve just found your videos, or what ever they are called. I first saw you on the wooded beardsman, when you visited him at the cabin. One of my fondest memories was vacation with my family in Quebec. My mom ask one year if she could go with us, that was one of her dreams. It was near Port Loring. She taught me how to catch different fish, fillet, and cook. My mom was born in 1913 in West Virginia, USA. She could hunt, kill and cook, al those little animals and wild birds. Growing up she cooked quite a few. She would try to trick us into eating ground hog, and coon, but us younger six kids would have no part of it. Our parents had 12, when # 12 was born, he left with another woman, so she raised us on the farm that our grandparents gave her part of theirs.

They had always butchered, but my memories were after he left. In the fall the older brothers and brother in laws, uncles and grandpap, , would come, after first snow, and butcher the hog. Mom said, all that was left was the Squeal. Until I watched you processing that pig, making lard, cracklins, and most of all, the head. I can’t remember if it was the pig or beef head she cooked and would bust it open and eat the brains. Often she would be given the head when others butchered. We kids would have no part of it, or the pickled pigs feet later on.

Thank you for the time and care you put into making your videos. I wish they had you tube when I was raising meat chickens, a steer, and when my son would bring home squirrels and rabbits for me to cook. I would tell him take them to grandma. We would but her and freeze his deer. The ground hogs we gave to the dogs.

You and Wooded Beardsman make me want to move to Canada after I've served my time in the Air Force. The U.S. has taken away the value of procuring and preparing meat. Meat is just another product here. Thank you for keeping it real.

haha. best use of flyers ever. hey that stove fan is pretty cool. I consider getting one myself when I had a fireplace. looks like it could come in pretty handy next time the wooded beardsman goes hot tenting to bring the stove fan.

luv that wood stove &u said right, "beauty of a cauldron"!!! i like to see people utilizing cast iron. that was all very very interesting! i certainly did enjoy it! so beautiful at your hm. i think that same wknd here it was 93 degrees F. today it's 96 degrees F here already. lovely kids! the food looked excellent and so good you made gravy!!!! hit liked!

Great video Jeremy, It's been many years since I last cooked a pigs head in the shop I worked. We mostly used the head meat for sausages as it has a nice balance of fat to meat ratio but the heads are great roasted like you did. I have also eaten the ears with soy ginger and garlic in a broth and that was also good if a little chewy but not too bad if they are sliced up thinly.

hey when do you have would this big you said it doesn't have a lot of heat value, but it looks perfect to use as a Norwegian fire log where you split it and burn it from the center. I've never tried myself but sure is a cool concept

Yum, I just had that for dinner last nowadays to save time I boil mine until just cooked, then in the oven to finish off. Best crackling ever. Awesome vid "One Wild"

Awesome stuff. I know it might be hard doing this with the cold ground up North, but I would love to see you bury something and cook it with fire coals covering it. Almost like they do in the tropics by wrapping up a particular type of meat in banana leaves, burying it, and then building a fire on top of it and letting the hot coals cook it. Would be really cool to see done with fish....Keep up the great content!

Looks tasty :) why did you put the foil on the ear? It didn't look like you ate it? was it to avoid a crispy ear, or to get all the good stuff out of it, and into the pan? :)

This may be a uncommon question... but does the skull bone smell as bad as typical wet bones smell?
Or does that smell go down because of all the flavours?

I prefer hip hop music myself when I roast pigshead😅
I haven't had that since I lived back I New Mexico Twenty years ago. I might have to do that soon. Great video Jeremy 😘
