Regardless of whether your Mac can still run Monterey/Ventura or not, I highly recommend installing a modern and easy-to-use Linux distribution (e.g. Ubuntu, Mint or Elementary) on these devices, either instead of or in addition to macOS. I just replaced Mac OS X 10.7 Lion on my late 2006 MacBook with a fresh install of 64-bit Kubuntu 22.04, and it’s running surprisingly smoothly!

Giving you some info from my experience with messing with macOS!

Mention that you should not buy Apple Silicon due to Apple shortening their life on purpose (SSD thing)
Also if you patch non Metal stuff to Mojave or later you'll start to face minor issues... minor issues that get bigger and bigger the further you are going!
So not recommended for everybody. Can get you in trouble with some apps that require Metal, they will either glitch or just crash and not even work at all!
Although if your Mac is stuck at OS X 10.11 El Capitan definitely use High Sierra patcher, because you will have no issues whatsoever! There's no actual reason why they wouldn't run High Sierra even officially!
If you are patching to Catalina and older then use Dosdude1's tool!
Known issue with Dosdude's Mojave patcher: with NVIDIA 9400M and 320M graphics, Chrome and Discord won't work.
Known issue with Dosdude's Catalina patcher: Chrome and all Microsoft Office apps have trouble launching. You can fix that quickly via Terminal but issue is back every time you update the app!
Dosdude's High Sierra patcher is absolutely transparent however!
OpenCore Legacy Patcher makes highlighting text in Microsoft Word problematic for non Metal! Use an older version and you are fine!

And if you want to patch further... well the maximum you can run with 2GB without crazy slowness is not Mojave but Catalina!
Although even for El Capitan (official maximum) 2GB is a bit low!
devices that have the Wi-Fi unsupported are fine after root patching. If done correctly I don't think it's even possible to have your Wi-Fi unsupported!
Machines stuck at Lion can run Mountain Lion through nexpostfacto patcher.
If they have Radeon X1300/1600/1900 graphics they can run Mavericks (maybe with issues I never tried)
Theoretically if you were to dissolder the mid 2007 MacBook Pro's CPU and solder a Penryn one, then it is compatible with every patch up to the newest!
