Possible improvements to make it creamier:
- set aside some water from the pot and let it cool down before mixing it with cheese.
- mix the cheese with pasta in a separate bowl (if the pan is too hot, when the cheese is touching it it's gonna get lumpy).

I love how you walk through prep, the cooking plan- beginning to end, then execute. There is nothing more frustrating than watching a host add ingredients only to have them flash on screen for 2 seconds. Excellent technique, viewer knows exactly what to expect and when. This is one of the few videos in English where they teach you to make it the right way. You see Babish adding butter and calling it 'an easy Cacio e Pepe' when it's just wrong, others add olive oil, etc. This is the correct way. Good job dude. I only find videos in pure Italian that do it this same way.
