Quick Sautéed Squash

2-3 Cups Squash, diced 1/4", (can be zucchini, summer squash, patty pan, or your favorite)
2 Tablespoons vegetable or coconut oil
1 Teaspoon Garlic, minced
Salt
Pepper

Heat large non stick pan with oil until is shimmers. Add garlic and stir for 20-30 seconds. Add diced squash and stir until coated with the oil mixture. Continue to stir and cook for 2-3 minutes until squash is the softness you like. Salt and pepper to taste. Serve immediately. Serves 4.

and then I add diced bell pepper and a half cup of corn and a drained and rinsed can of black beans and put it on quinoa or wild rice....Meal In Itself. no Meat Needed. EAT!! Bigg Huggs!!
