Because the ceramic is less toxic than nonstick can't you just use lower to med. heat to solve the problem?

My teflon pans got bad after a yes my ceramic pan is in use since several years, the braun staining is true, it is a much better coating than teflon and i have cast iron pans too.

why ceramic. I thought cast iron and stailess steel, carbon steel are the solution.

I never had a ceramic pan break but I still don’t get along well with them. Things burn so much more quickly and it always sticks. Unlike stainless steel I really haven’t found a technique for them to avoid that. They’re also hard to clean imo, you either damage the ceramic or you end up with permanent brown stains.
