Say hello to your new favourite lemon cheesecake 🍋💛 It’s so simple, a delicious no-bake recipe, and I utterly adore it. This recipe has always been in my blog top favourites since I published it, and I am not surprised. Sometimes, the simple recipes are the best 🥰🙌

Recipe:
Biscuit Base
■ 300g shortbread
■ 100g unsalted butter
Cheesecake Filling
■ 600g full-fat soft cream cheese
■ 100g icing sugar
■ 300ml double cream
■ 75ml lemon juice
Decoration
■ 150 ml double cream
■ 2 tbsp icing sugar
■ Lemon slices
■ Lemon zest

I have not try shortbread biscuits in a cheesecake sounds great will try it could you use shortbread bass for other cheesecakes thanks 👍

I always have trouble with the filling to be too soft, it definitely can't be sliced like yours do. What am I doing wrong please?
