Italian Style Porcini Mushrooms (Funghi Trifolati)

One of the most traditional Italian recipes for porcini mushrooms is funghi trifolati. The name essentially translates to mushrooms in the style of truffles. In the style of truffles here only means they're sliced, and is kind of a misnomer as truffles aren't usually cooked in a pan like this.

Either way It's a great way to have fresh porcini if you're lucky to get some. It's an easy side dish anyone can make, just make sure to take your time cooking the mushrooms so that they lose volume and brown well all over-that's the key to big flavor here.

Although fresh porcini is delicious, I prefer to dry the ones I find. I find the aroma deeper end earthier...and when the snow lies deep here in Norway during winter, I unscrew a glass, take a big sniff and dream of next season...in fact, I just did!

Great channel .. love your recipes .. a tip for porcini is to apply the same wet sauté you do with CoW but much more water and let the water reduce as well then go with the oil and butter sauté after it’s reduced ..
