Challah , Tsoureki - Easter Bread..3 ways

Challah or Tsoureki in Greek is a special bread of eastern european..origin in Jewish cuisine..prepare especially during Easter celebration.

You will need:

For the dough:
6 cups all purpose flour, set aside about 1/3 cup to be added last
1tsp salt
2/3 cup granulated sugar, set aside about 3tbsp for yeast mixture
1/2 cup warm water for yeast mixture
1 sachet yeast
2 tsp vanilla essence
2 tsp baking powder
1/2 tsp ground cinnamon
1tsp grated orange rind
1'1/2 cup orange juice, fresh or in can, room temp.
2 eggs, beaten , about 43g each

* mix together yeast, 1/2 cup warm water with 2-3 tbsp of granulated sugar

Extras:
40g soft butter for kneading
2-3 tbsp flour for kneading
melted butter for brushing after baking
1/4 cup chopped almond

for the eggwash:
1 egg white
1tbsp water
- for brushing before baking

For dark chocolate ganache:
90g dark chocolate
2tbsp milk
- melt together over simmering water or microwave oven..

For white chocolate ganache:
90g white chocolate
2tbsp milk
- melth together over simmering water or microwave oven

* reheat if necessary before glazing
*cool down bread before glazing

1st rising of dough: 1 hour
rising of dough before baking: 1- 1'1/2 hour

Cooking time and temp: 180°- 20minutes, reduce to 160° and bake for more 5 minutes.

To make 2 round shape, about 80cm long ..

to reheat: Cover with aluminum foil and heat in a moderate oven for about 10 min.

You can freeze this recipe for up to 3 months.

challah is one of my favorite bread.. i would always look forward to easter because this bread is only produce during easter time..looks so delicious
