Don't forget the chipotle!

At a classic like Mexico City’s casual Don Polo–a place that’s fed tortas, licuados and aguas frescas to locals for generations–scrambled eggs sandwiched into a crispy telera is a go-to. Scrambled eggs (solo or with chorizo or ham or bacon), layered with cheese and avocado. The traditional smear of black bean puree settles the flavors firmly into the Mexican kitchen and some pickled jalapeños or smoky-aromatic chipotles bring smiles to every mouth.

Looks delicious! The only thing I would change is to mash the avocado a bit with a fork and then add it to the sandwich. It stays better on the "torta" instead of falling off on almost every bite. I will be making those soon! Thanks Chef!

My 2 all time fave breakfasts... Mexican style Scrabble eggs 98% cooked then finished with a couple laddles of salsa Verde. Poured on top of a bowl of Mexican white rice - flavored with a little bit of onion and chicken powder.

My second is refried beans with pickled jalapeno and lots of melting cheese, tacos, tortas, or i like to pour it on white rice ha

Made it this morning. Hooboy, that’s a good torta! Even more than that, thank you for the sliced avocado technique, it’s genius. I hated either smushing them trying to cut them after they were peeled, or having to peel each individual slice if I cut them with the peel on. I’ll be using that technique, and making this sandwich often.
